Classic Banana Bread Recipe Ingredients:
Eggs: Eggs are a pretty obvious ingredient in a classic banana bread recipe, but a trick that I Iike to use when I’m baking is to take the eggs out of the refrigerator 30 minutes before I start making the batter to give them time to come up to room temperature. Baking is a science and the temperature of your batter does matter!
Sugar: Of course there is sugar in this banana bread recipe, but a special hack you will see in the recipe is that you need to cream the sugar and butter together for a couple of minutes. The mixture should be very fluffy and light!
Butter: Baking with butter instantly makes your batter more rich and moist. You will find moist banana bread recipe with oil, but I like using butter. I prefer grass-fed butter that is a beautiful bright yellow color.
Bananas: You can use over-ripe fresh bananas or bananas that have been frozen. Just note that frozen bananas should be taken out of the freezer early in order to warm up to room temperature. If you’re in a pinch you can also use the defrost setting of your microwave.
Vanilla: Vanilla is the hidden star of most baking recipes, and I would recommend using pure vanilla extract, not imitation vanilla. I always like to put in about an extra 1/2 tsp of vanilla to every baking recipe!

Ingredients
- 1/2 cup butter softened
- 1 cup sugar
- 2 eggs room temperature
- 3-4 over-ripe bananas mashed
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4-1 cup chocolate chips or nuts (optional)
Instructions
- Preheat oven to 350 degrees.
- Cream butter and sugar for several minutes until light and fluffy.
- Add eggs, vanilla, and mashed bananas and mix well.
- Add remaining ingredients and mix until just combined.
- Line four mini loaf pans with parchment paper and spray with baking spray.
- Fill each lined loaf pan about half way. Transfer to pre-heated oven and bake for 25-30 minutes or until they spring back to the touch and are golden.
- This batter also makes amazing muffins! Line 2 muffins tins with liners and fill to about 2/3 full. Bake 12-18 minutes.
